Chablis
De streek Chablis ligt halverwege de Côte d’Or en Parijs. De bodem bestaat uit een dikke laag van oesterfossielen. Deze geven de droge witte wijnen een uniek mineralig karakter. De streek kent een zevental Grand Crus die allen direct ten noordoosten van het plaatsje Chablis liggen. Door de grote vraag naar Chablis zijn de grenzen al diverse malen uitgebreid, dit tot groot ongenoegen van sommige producenten. Ook blijft hier de eeuwige discussie of een echte Chablis al dan niet op hout dient te rijpen. De drie onbetwiste topproducenten zijn hier Raveneau, Dauvissat en sinds enkele jaren ook het huis William Fèvre. De laatste jaren lijken ook enkele jongere producenten de weg omhoog gevonden te hebben onder hen Denis en Isabelle Pommier.

Burghound: "This is also moderately reduced and renders the nose difficult to read. The full-bodied, serious and notably rich flavors brim with dry extract, adding a real sense of volume to the minerally, clean, long and moderately austere finish. This is presently not quite as complex as the Vaillons but that may change with a few years in bottle."

Burghound: "An odd nose of residual lactic aromas and white peach is followed by rich, full and very serious broad-scaled flavors that possess good power and ample volume, all wrapped in a palate staining finish that delivers outstanding length and complexity. The nose should clean up and in time, I expect this to be excellent. Sweet spot Oustatnding!"
