Claude DugatDe uiterst vriendelijke en bescheiden Claude Dugat, geassisteerd door zijn vrouw en drie kinderen, maakt op een minuscuul bezit (nog geen 5 hectare) enkele van de grootste wijnen van de gehele Bourgogne. Alles wordt in eigen beheer en met de grootste aandacht gedaan en daarom zal dit bezit niet verder in omvang groeien. Dugat kent letterlijk al zijn wijnstokken en weet hoe ze het best gesnoeid kunnen worden. Hij verzorgt zijn stokken als waren het zijn eigen kinderen, want alleen met het grootste respect en de beste zorg zullen ze optimaal floreren. De wijngaarden worden geploegd met het eigen paard, iets wat de laatste jaren weer meer gebeurt. Ook Domaine de la Romanée Conti en diverse andere toppers prefereren het arbeidsintensieve en dus kostbare werk met het paard boven dat van de tractor omdat het paard de gronden niet dicht drukt. In de kelder doet Dugat zo min mogelijk. De druiven worden volledig ontsteeld en ondergaan na hun alcoholische vergisting hun rijping op nieuwe eikenhouten vaatjes. In het vroege voorjaar (het tweede jaar volgend op de oogst) gaat de wijn zonder filtering op fles. Robert Parker: Claude Dugat is one of the finest winemakers in the world. This estate is making sensationally sumptuous wines. Tiny Yields, physiologically ripe grapes, and a non-interventionist winemaking philosophy result in enormously rich, aromatically complex, spectacular wines. This is one of the rare estates in Burgundy where all the wines, from top to bottom, are seemingly always super”. De wijnen van Dugat zijn dusdanig schaars en gezocht dat er een levendige handel in is en ze behalen op veilingen vaak astronomische bedragen.

Sarah Marsh in The Burgundy Briefing: "A lucid, ripe aroma, rich with blackberry fruit. On the palate there is spice and sweet rounded fullness. A pure and well-mannered Gevrey with rich and supple, fruit-coated tannins. Lovely fruit on the finish which is both fresh and well sustained. Top notch!". Deze Gevrey is minstens op het niveau van een goede premier cru.
