Perrot-MinotChristophe Perrot-Minot is momenteel een van de meest besproken producenten van de Bourgogne. In nog geen tien jaar wist hij het familie domein te vormen tot een van de beste adressen voor rode Bourgognes van de hele Côte de Nuits. Christophe Perrot-Minot nam, na een korte carrière als courtier (tussenpersoon), de leiding over het bezit in 1993 van zijn vader over. Al snel maakte Christophe naam met zijn ultra rijke, geëxtraheerde wijnen die met name in de Verenigde-Staten bijzonder werden gewaardeerd en in de pers aldaar uitzonderlijk hoge scores kregen. Maar met de jaren veranderde Christophe’s visie over grote rode Bourgognes en dit resulteerde in een radicale wijziging van de stijl van zijn wijnen. De laatste jaren zoekt hij naar verfijning, finesse in zijn wijnen. De concentratie die zijn wijnen bezitten, komt uitsluitend uit de wijngaard en niet uit de kelder. De rendementen liggen bij Perrot-Minot uitzonderlijk laag (onder de 30 hl per hectare net als bij Ponsot en Domaine Leroy). De aandacht die aan de wijngaarden wordt besteed, grenst aan het maniakale. Dit geldt ook voor de oogst. Perrot-Minot beschikt over een opvallend grote ploeg van plukkers zodat op verschillende locaties tegelijk en binnen een korte tijdsspanne alle druiven binnengehaald kunnen worden. Na binnenkomst in de kelders gaan de druiven op twee lopende banden waar in totaal 24 man staan die alle druifjes stuk voor stuk selecteren alvorens deze in de gistkuip terecht komen. Na een korte weking en een uiterst zachte persing gaat de wijn op deels nieuwe houten vaatjes en wordt na een maand of 16-18 zonder filtering op fles gebracht. Het resultaat is verpletterend en de wijnen staan absoluut aan de top van de Bourgogne-piramide. Ze zijn haast barokaal, maar tevens uiterst subtiel en verfijnd en de verschillende terroirs komen uitstekend tot hun recht. De wijnen combineren een enorme diepte en intensiteit aan puurheid, elegantie en verfijning. Christophe Perrot-Minot laat duidelijk zien dat hij tot de grootste talenten van zijn generatie behoort.

International Wine Cellar: Bright ruby-red. Musky blackberry, stone, spices and violet on the vibrant nose. Dense, supple and sweet; quite expansive for the year, with ripe acidity supporting the flavors without introducing any hardness. A fatter and more pliant style than the Beaux-Monts; this is really stuffed with fruit. Finishes with persistent black fruits and minerals”.
